Below, we’ve found seven of the best new and up-and-coming bars in Singapore for you to check out this holiday season. Why not indulge yourself and your loved ones in a new experience while sipping on some fancy libations?
Dragon Chamber
Pay The Dragon Chamber a visit the next time you’re in the mood for distinctly Asian-inspired drinks. The secret-society-inspired speakeasy, tucked behind the refrigerator door of a cafe, boasts oriental-themed food and drink, with seven new cocktails conjured from the mind of Kishan Kumar. Earthy tones shine through the Dragon’s Eye, inspired by local dessert favourite cheng tng, and the tipple is finished with whiskey mist. Mala lovers should give the Malatini a go, where Sichuan peppercorns find their fiery flavour infused in gin from Shanghai.
El Chido
Located on the rooftop of the newly opened Pullman Singapore Hill Street, El Chido offers a vibrant Mexican restaurant and bar experience. With stunning views from the eleventh floor, El Chido is situated next to an infinity pool, so you can jump in for a dip with your drink of choice in hand. There are eight signature cocktails at El Chido, such as the spicy Mariachi Margarita and the Martini Express, spiked with the tanginess of tamarindo. You can snack on Nacho Man (their version of loaded nachos) or even get some Shrimp and Chorizo Tacos for a satisfying night out on the town.
Flow Restobar
If you’re dying to be transported to sunny California after a hellish week in the office, give Flow Restobar a visit. Nestled on Neil Road, Flow’s casual warmth and welcoming ambience make the perfect post-work hangout with colleagues. To fill your belly, opt for classic American staples, like their chicken wings or juicy cheeseburger and finish your meal off with some pecan pie. Jazz up your Friday night drinks with their Bacon Maple Sour or the thyme-infused Maxwell MRTini. You can even enjoy happy hour from 5 pm to 7 pm from Tuesdays to Saturdays.
Bar Kakure
For a more intimate experience, head to Bar Kakure. Hidden behind a discreet door, a secret key code will lead you into the Japanese-style cocktail bar. Kakure is helmed by bartender Kazuhiro Chii, whose experience in the bartending scene, interwoven with his passions for Japanese martial arts and traditional tea ceremonies, has led to a unique take on classic and original cocktails. On the drinks menu, you will find the wasabi-infused Yamaoroshi and the Drunken Pooh Martini which comes with a gummy bear for a playful twist. If you’re feeling peckish, call for a Grilled Eihire (stingray fin) or the premium Aburi Toro with Uni and Truffle to complete your Kakure experience.
Slate
Slated to open its doors in December this year, this Asian bar focuses on a minimal-preparation technique for its seafood-forward dishes. Dive into fresh seafood and enjoy it with fresh, fruity cocktails, conceptualised by Lai Siong Jin, who has worked on the tantalising drinks at restaurants Claudine and Loof. Slate is one of three new dining concepts to be fuelled by upcoming speciality grocer One Grocer, led by the Ebb & Flow Group. The collective is also responsible for One Michelin Star restaurants Willow and Sommer, so you know you’re in good hands.
Exit Stage Left
Send yourself back in time to Singapore in the 1960s. At Exit Stage Left, the experience is focused on hyper-local tipples, as part of New World’s End, an immersive art experience that tells the alternative stories of Singapore. The glitzy pop-up bar exclusively features locally-distilled spirits and indigenous ingredients, for a true-blue Singaporean experience. From the bar’s signature cocktail list, try The Haw House Sour which features Tanglin Singapore Gin with the iconic hawthorn fruit, or The Songbird, a spicy, pineapple and mango-heavy take on the classic Jungle Bird. Exit Stage Left will be open from now till January 31, 2024.
MOGA
Experience the prohibition era-themed izakaya at Pullman Singapore Hill Street. Pulling you back into 1920s Japan, MOGA serves up classic izakaya fare like skewers and grilled items in a digital mish-mash of contemporary and historical Tokyo. Key items include the Gindara Saikyo Miso (grilled cod in den miso) and the MOGA Samurai Roll. The bar at MOGA also features signature cocktails that come with a categorically Japanese flair. MOGA’s Lost in Translation is an old-fashioned with a miso, honey and kinako flourish, and the Hana Sour marries the light fragrance of ginjo sake with elderflower and citrus.
